Thanks to its high fiber and protein content, it is a very valuable cereal in the gluten-free diet. Sorghum can be used in many ways in cooking, whether to make special breads, porridges or semolina. Culinary use: Cooked grain: It is boiled like rice and used in salads, side dishes or main dishes. Ideal as a base for gluten-free meals.Sorghum flour: Used to make bread, tortillas, cookies and baked goods. It is a popular alternative in gluten-free diets.Porridges and gruels: Widely spread in African and Asian countries, prepared by cooking the ground or whole grain with water or milk, often sweetened or spiced. Preparation: It must be soaked in water for several hours (for example, overnight), for 1 cup of sorghum add 3 of water (do not salt).
